Journaling

Do you need some encouragement, need to share, feeling sad, or wish to encourage someone else? Sit down and share it with the FCC mom's group. We all get sad, discouraged, even blessed and thankful. Comment in this post on your thoughts and experiences. Keep in mind these verses when sharing your thoughts here: The Lord allows these people to dwell in his sanctuary "Those who refuse to gossip or harm their neighbors or speak evil of their friends" Proverbs 15:3; And Phillipians 2:14 " do everything without complaining or arguing".

Deceptively Delicious!!!

I have always been health conscious and have strived to lead a pretty healthy lifestyle...nothing over-the-top, I just enjoy exercising, putting good things into my body and avoiding things that will end up hurting me. As a mom, and primary chef and shopper for my household, I know that it is on me to pass on this idea of health to my family whether it is through meals, snacks, activity or even teaching. I have recently come across a great addition to my system that has not altered the way I do things too much but definitely supplements what I am already doing with regards to the foods I and the rest of my family eat. Jessica Seinfeld's cookbook, "Deceptively Delicious," is great! My kids are supposed to be getting 3+vegetables, 2+ fruits, 3 whole grains, 3 calcium-rich foods, plus protein, fiber and minimal or no saturated and trans fats every day! I'm good, but not that good. I do okay with the fiber, grains, protein and fats but it's really hard to push all of those vegies and fruits into one day. That's where Jessica's recipes come in. She makes pureed vegies and fruits and sticks them in her freezer and then inconspicuously adds them to things like chicken nuggets, pancakes and even muffins and brownies! Your family gets an extra dosing of good foods and then you can still serve vegies on the side for pre-dinner appetizers and with lunch and dinner entrees. I have tried quite a few of the recipies and all have been a go! Today for lunch we had doctored-up boxed mac-N-cheese. I get Trader Joe's version (because it has natural ingredients and it's cheap), added pureed cauliflower and a few grates of sharp cheddar and voila'...happy faces, no complaints and lots of gobbling! I served it with some frozen blueberries (like a dessert to my little ones) and a piece of whole grain toast with a little non-hydrogenated buttery spread (also from Trader Joe's--Earth Balance), and sprinkles of cinnamon sugar (heavy on the cinnamon, light on the sugar). There are free recipes on Jessica's website..put in deceptively delicious and you'll get there. You can try out some recipes before purchasing her cookbook so you can see if her plan works for you, too!
